Sweet Potato Pancake

Sweet potato is a versatile ingredient and it makes a great first food for babies because of the delicious sweet taste and soft texture.  They are not known to be allergic and also have a creamy texture, making it a go to food for mommies.

Sweet potatoes are also highly nutritious and loaded with Calcium, Iron, Vitamin C and E. It has the additional benefit of Vitamin A which is good for the eyesight. Sweet potatoes are rich in natural sugar so it also provides healthy weight gain in babies. It is a good food to include in baby’s diet for their growth and development.

The best thing about sweet potatoes is that they are a rich source of dietary fiber which will lead to healthy digestive system and also will prevent constipation.

I enjoy eating roasted and baked sweet potatoes so decided to try  sweet potatoes pancakes as well. It is very simple to prepare and will also make a great finger food.

How to sneak in nutrition

It is very important to boil sweet potatoes with their skin, it will retain the maximum nutrition.  I have used whole wheat flour instead of Maida or all purpose flour. Using arrowroot powder also increases the nutrient value. Make use of desi ghee instead of oil. Serve the sweet potato pancakes with homemade butter for more nutrition.

Ingredients

  • 3 medium sized sweet potatoes
  • 1 cup whole wheat
  • 1 cup arrow root powder
  • 2 tsp Oil or Ghee
  • 1/2 cup milk
  • 1 pinch cardamom powder
  • 2 tsp almond powder (optional. Avoid if the baby is allergic to it)

How to make Sweet Potato Pancakes

Wash the sweet potatoes well in running water. After that steam the sweet potatoes in a pressure cooker for 10-15 minutes.

Grate the steamed sweet potatoes with the help of greater.

In a bowl mix the wheat flour and arrowroot powder in 1/2 cup of milk. Add the grated sweet potatoes along with cardamom powder and almond powder. Mix well.

If the batter is too thick add more milk and adjust. Allow the batter to rest for 2-3 minutes.

Place the iron tawa on the stove and grease the tawa with ghee.

Pour a ladleful of batter on the tawa and drizzle ghee or oil. Allow the sweet potato pancakes to cook for 1-2 minutes in medium flame and then flip on another side.

Serve the delicious sweet potato pancakes with butter. You can also cut the pancakes into stripes and offer it to your baby. Honey can also be used to garnish if your baby is over 1 years old.
