Pumpkins or Kadu or Kodra are considered to be a boring vegetable. Only limited dishes can be prepared using pumpkin like as a side dish for chapati, rice etc. Recently I prepared Pumpkin Banana Shake, and my family liked it (or so they said to my face!).
Pumpkin is a nutrient rich food and is loaded with vitamins and minerals. It is low on calories and high on minerals like Vitamin C and Vitamin E.
Today, I am going to share the recipe for pumpkin bread with you, its very simple and easy to prepare. The best part is that it is almost like a cake – extremely moist and yummy.
How to sneak in nutrition
I prefer to use fresh pumpkin puree rather using canned with preservatives. I have made use of soya milk instead of cow’s milk, it is a good choice for kids who are lactose intolerant, but cow’s milk is also great. Soya milk contains high-quality protein, calcium, and iron – great for growing kids.
Ingredients
• 1 Cup Cooked pumpkin puree
• 3/4 Cup Brown Sugar
• 1 Teaspoon Vanilla Extract
• 1/2 Cup unsalted butter
• 2 Eggs
• 1/4 Cup soya milk/milk
• 2 Cups Whole wheat flour
• 1 Teaspoon Baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt (Skip if you have taken salted butter)
• 1 teaspoon cinnamon powder (Optional)
Method to Prepare the Pumpkin Bread
The initial step is to prepare pumpkin puree for that preheat the oven to 180 degrees C. Cut the pumpkin into 4 parts. Now, scoop out the seeds and fibers.
Rub the cut surface with olive oil and place the cut side down into the pan. Take a baking pan and add 1/4 -1/2 cup of water to the pan.
Bake the pumpkin for 60-75 minutes or until the flesh is tender when pierced with a fork.
Allow the pumpkin to cool and scoop out the pumpkin flesh. Now puree the pumpkin using a food processor.
You can make use of this puree to prepare the bread. You can also freeze it for future use to make delicious Pumpkin Banana Shake.
Take a mixing bowl and add butter, brown sugar, soya milk and eggs, vanilla extracts (wet ingredient). Beat all the ingredients well.
Take another bowl and mix all the dry ingredient like whole wheat flour, baking powder baking soda, salt, cinnamon powder and mix well with the help of the spatula.
Add the wet and dry ingredients together and mix, to the same add pumpkin puree and mix well.
Take a bread mold and grease the pan with butter.
Bake the pumpkin bread for 30-45 minutes at 180-degree celsius.
Pumpkin bread can be served as a healthy dessert. Enjoy!
