My daughter is fond of butter cookies. Every time we go to a mall or a supermarket she rushes to the cookies section.But, they are usually loaded with maida and preservatives. I avoid them.
I prefer to make healthy home made cookies with wheat and multi grain flour. I thought of preparing butter cookies, they are crispy and buttery in taste. They make yummy snacks and can be given as a festival gift too. These butter cookies taste delicious with a warm cup of milk.
These cookies are very simple to prepare, you can also store it in air tight container for 10-12 days.
Butter is a super food and is extremely healthy when consumed in moderation. It is loaded with fat soluble vitamins like vitamin A, E and healthy saturated Fats. Butter contains healthy fatty acids and Vitamin K2, both have powerful effects on kids health and growth.
Jaggery helps in digestion and keeps constipation at bay. It is loaded with antioxidant and essential minerals like zinc and selenium. It improves resistance to disease and infection and increase immunity .
How to sneak in nutrition
I have used organic jaggery for sweetness instead of sugar, jaggery provides instant energy. I prefer to use home made butter.
Ingredients
- 1.5 cup whole wheat flour
- 5-8 tablespoon unsalted butter at room temperature
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon powder
- 4 tablespoon milk
- 4 tablespoon curd
- 1/2 cup organic jaggery powder
- a pinch of salt
How to Prepare Butter cookies
Take a mixing bowl add whole wheat flour, baking soda, and salt to it. mix everything well using a spatula. Add unsalted butter and mix it with flour using hands, you will get bread crumb like texture.
Add organic jaggery powder and cinnamon powder to the mixture. Add curd and mix gently using hands.
Again add 2 to 3 tablespoon of milk and prepare a tight dough. Add more milk if needed.Do not knead the dough.Cover the dough and refrigerate it for 2-3 hours.
Preheat the oven to 180 degrees celsius for 15 minutes. Spread some flour on the work surface and roll the dough. It will take a little effort.
With the help of cookie cutter, cut the dough in round shape or in any shape of your choice
Grease the baking dish generously with butter. Place the cookies in the baking tray with an equal gap of about 1 inch.
Bake the butter cookies for 15-20 minutes or until they are golden in color. Once baked, place the butter cookies on wire rack and allow them to cool.
You can store it in an air light container when they are completely cool. Enjoy!
