Growing up in a Marwaari family, we usually had all fried snacks like Mathri and Thekwa. Though these are absolutely delicious and healthy when fried in ghee (not refined oil), I now like baked goodies more.
Aata Biscuits make great finger foods as well as good teething biscuits for toddllers. Oats biscuits are also healthy and nutritious.
How to sneak in nutrition
You can also make use of jaggery. I prefer to use almond milk for moistness. Almond milk is a great choice for lactose intolerant people and it is also a rich source of Vitamin C, Vitamin B6, Vitamin E, and folate. I have made use of homemade ghee. One can also add chopped walnuts or almonds to increase the nutrient quotient.
Ingredients:
1 cup or 125 gms – Whole Wheat Flour (Aata)
1/2 cup or 100 gms – Clarified Butter frozen (ghee)
1/2 cup or 60 g – Powdered Sugar/Bhuura/Khand
1 tsp – Baking Powder
4 nos – Cardamoms (elaichi) powdered
3 tbsp – Cold milk or as required
How to make Aata Biscuits:
Pre-heat the oven to 180⁰C (160⁰C in case of convection or fan ovens). Grease the baking tray and keep aside.
In a large bowl take 1 cup whole wheat flour. Add 1/2 cup frozen clarified butter and use your finger tips to mix the wheat flour and clarified butter, till it forms bread crumbs like texture.
Add the cardamoms’ powder, baking powder and 1/2 cup powdered sugar and mix well.
Use the milk to form dough.
Make small balls as you would for chapattis. Roll the dough, at least an inch thick and cut into desired shapes. Place on a greased tray.
Bake at 180⁰C (160⁰C in case of convection or fan ovens) for 15 minutes or till done. Once done take them out of the oven. Let them cool completely. Enjoy!
