As any mom who has a kid in school, I too was looking for healthy snacks options that can be given in tiffin box. Since we had already tried oats dosa and oats dumplings I came up with an idea of preparing a snacks option which is tiffin friendly as well as yummy in taste.
As an advocate of natural and organic products, I also prefer to eat local grains over ones that have inherently (or genetically..??) not been part of our Indian diet.
Oats is a relatively new grain in the Indian market, and people have slowly been incorporating them in their diet and forgotten healthier Indian grains like millets.
Another misconception that Indians have, thanks to our advertising gurus is that oats are only for people who are trying to lose weight. Hence many people also don’t want to give them to their babies as they feel it will result in weight loss.
Today, I am going to share a healthy cookie recipe i.e. Oats cookies. Oats are a high source of dietary fiber, selenium, magnesium, and zinc. They are good for the heart. Oats are highly suggested for their good effects on the digestive system since it will reduce the risk of obesity. These cookies will make a lovely tea time snacks too.
How to sneak in nutrition
I have used the natural sweetness of honey in this recipe. You can also make use of jaggery. I prefer to use almond milk for moistness. Almond milk is a great choice for lactose intolerant people and it is also a rich source of Vitamin C, Vitamin B6, Vitamin E, and folate. I have made use of homemade butter to and also try to substitute choco chips with walnuts.
Ingredients
- 1/2 Cup unsalted butter at room temperature
- 1/2 Cup honey
- 1 Egg at room temperature
- 1 Tablespoon almond milk /Milk
- 1/2 Cup whole wheat flour
- A pinch of salt
- 1/2 Teaspoon baking soda
- 1 Teaspoon of baking powder
- 2 Cups rolled oats
- 1/4 Cup Walnuts (You can also use choco chips)
Method To Prepare Oats Cookies
Start with preheating the oven at 180-degree celsius. Grease the baking tray with butter.
Take a mixing bowl and beat butter and honey together for 1 minute. To the same add egg and almond milk and mix well, the wet ingredients are ready.
In another mixing bowl and sift whole wheat flour, baking soda, baking powder, and salt. fold all the dry ingredient into the wet ingredients. Mix gently and now add oats and walnuts or choco chips.
Drop a teaspoonful of cookie batter onto the sheet and bake for 15-17 minutes in bake mode.
Allow it to cool. Enjoy!
