Curd vegetable sandwiches are light, colorful, delicious and healthy breakfast option. They can be enjoyed as a snacks and they make a perfect treat for picnics and play dates. The best part about the recipe is you can mix vegetables of your choice, it is an easy way to sneak vegetables into your kid’s meal.
How to sneak in nutrition
I have made use of home made the curd and multi grain bread to make the sandwiches more nutritious. Sesame seeds can also be added as they are loaded with vitamins and minerals. They are a rich source of iron, magnesium, phosphorus, copper, potassium, and fiber.
Ingredients:
Bread – 8 Slices
Plain hung Curd -1 cup
grated cabbage – 1/4 Cup
grated carrot- 1/4 Cup
Finely chopped Capsicum -1/4 Cup (I have used red, green and yellow)
Ghee/ butter
Pepper -1/2 teaspoon
Italian seasoning – 1 teaspoon
Sesame Seeds -3 teaspoons
Salt to taste
Method to prepare Curd vegetable sandwich
Line the strainer with a muslin cloth and add curd to it. Gently squeeze out the excess water from the curd. Hang the curd and leave for 2-3 hours. After 2 hours you can see the excess water from curd is drained out. You can prepare the hung curd in advance and refrigerate it.
Take a mixing bowl and add all the chopped vegetables to it. Mix well. Add Italian seasoning and pepper powder. Now, add salt to taste and mix well.
Spread the curd mix on one slice of multigrain bread and cover it with a plain slice of bread.
Take a tawa and heat over medium flame. Now, add a teasppon of butter and add 1 teaspoon of sesame seeds allow it to crack and add sandwich over it.
Brush the top of sandwich with butter.and grill the sandwich from both sides on medium heat until golden brown. Curd vegetable sandwiches are ready, serve with yummy pumpkin banana shake.
