Easy Watermelon Popsicles Recipe For Kids

Summers are here and the scorching heat is definitely making us thirsty and dehydrated. The only bearable this about summer is the wide range of fruits. The market is flooded with watermelons, mangoes and musk melons!!

Summer is also a great time to enjoy some lip smacking popsicles. I enjoy making watermelon popsicles for kids as it is a great way to introduce fruits which some kids  don’t prefer to eat. Moreover, these Popsicles can also be given to teething babies. This will relax their painful gums to a great extent.
Watermelon is a refreshing fruit with loads of Vitamin C, Vitamin A and essential minerals which we usually sweat out during summers. It is a rich source of anti-inflammatory antioxidants. And is also a thirst quenching fruit. It will be great to relax and enjoy these popsicle after a tiring day of work or play in hot summers. If only someone would do all the hard work and them too, for me! 🙂

How to sneak in nutrition in Watermelon Popsicles:

If watermelons are sweet, don’t add sugar. If you like sweet popsicles then add jaggery instead of plain white sugar. Use fresh coconut milk or one without preservatives.

Always use Stainless steel, BPA free or silicon popsicle molds. I use this one for my toddler as it is easy for his little hands to hold, but am thinking of investing in a stainless steel one as well.

Ingredients

  • 4 Cup of roughly chopped seedless watermelons
  • 4 spoon of powdered jaggery -Optional (This can be skipped while preparing for babies)
  • 1 Tablespoon of fresh lemon juice
  • 1/2 cup fresh coconut milk
  • 1 cup kiwi or grapes or anar

How To Make Watermelon Popsicles?

The first step is to blend 4 cups of watermelons, 2 tablespoons of powdered jaggery and 1 tablespoon of lemon juice in a blender until well pureed. Carefully pour the watermelon into the popsicle mold, fill about 1/2 portion.

Cover the lid and insert the popsicle sticks and allow it to free for a couple of hours. Meanwhile prepare the second layer.

Take a fresh mature coconut and break it to open. Chop around 1/4 of the coconut. Take the roughly chopped coconut piece, add 1 tablespoon of jaggery powder and blend it. You will be able to see a paste, now add 1/2 cup of water and blend it again till the coconut is ground well. It will take 2-3 minutes.

Transfer the mixture into a bowl and line it with a fine strainer. Press with a spoon on the coconut jaggery shreds. This will give you pure coconut milk, without any debris.

The coconut milk should be in pour-able consistency if it is thick, add 1-2 tablespoon of cold water to thin it. Remove the watermelon popsicle and gently remove the lid. Now, carefully pour the coconut milk over the watermelon layer. This will make the second layer. Cover the lid and allow it freeze for 1 hour.

Prepare the last layer. Meanwhile, blend the kiwi or grapes or anar and strain the juice. Remove the popsicle mold again and add this third layer of kiwi over the second layer of coconut milk evenly. Freeze again for 4-5 hours.

In order to remove the popsicle from the mold, run the mold under tap water for few seconds then slowly pull from the molds. Enjoy!
