Oats Dumplings

Ingredients
  • 1 cup – Steel cut or rolled organic oats
  • ½ cup Rice flour
  • ½ cup – Onion finely chopped
  • ¼ cup – Grated beetroot
  • ¼ cup – Finely chopped beans
  • ¼ cup – Finely chopped capsicum (I used red, green and yellow)
  • ¼ cup – Grated carrot
  • ¼ cup – Grated coconut
  • Salt as per taste
  • ½ Teaspoon Pepper powder
  • 1 – Teaspoon Jeera powder
  • 1 tbsp – Ghee or oil
  • 1 tsp – Mustard seeds
  • 1 tsp – Urad Dal
  • Asafoetida – a pinch
  • Coriander leaves – finely chopped
Instructions
  1. Dry roast the oats for 5 minutes in medium flame. Allow it to cool and powder it coarsely.
  2. Take a pan and heat ghee and add mustard seeds and allow it to splutter, add urad dal and a pinch of asafoetida. Add the onions and saute it for 2 minutes.
  3. Add the finely chopped capsicum and beans. Saute it for 1-2 minutes. Allow it to remain crunchy.
  4. Now add grated carrot, beetroot, carrot. Saute it for 1-2 minutes. Add jeera powder and pepper powder. (You can also add green chillies).
  5. Add the grounded oats and rice flour to ½ cup of water. Add salt as per taste. Add freshly chopped coriander leaves and let it cool down.
  6. Grease your palms with ghee and make oval-shaped dumplings. You can take help for your kids. Trust me, they love it. If you are not able to prepare the dumpling sprinkle some water and try again.
  7. Take an idli cooker, grease the plates with ghee or oil and steam the oats dumpling for 10-12 minutes. Serve hot with mint chutney.
  8. You can also pan fry them to make them slightly crunchy!
